Footnotes and Notes

  1. 1. Different countries have different cuts and names, and sometimes use the same name for a different cut.
  2. 2. Charales are a type of fresh water fish similiiar to smelts. They are common in most mountain Mexican lakes. They are fried and eaten whole.
  3. 3. Crab has two words in Spanish, Jaiba and Cangrejo and they are considered to be two different animals in Spanish. Jaiba is a crab that mainly lives in water whereas cangrejo mainly lives on land. They also have different body types.
  4. 4. Chumiles and Jumiles are insects of the order Hemiptera and family Pentatomidae. Pentatomids are commonly called "stink bugs" in English. Chumiles and Jumiles are eaten mainly in the Mexican states of Morelos and Guerrero. Jumiles are plentiful from November through February. Jumiles. Wikipedia.org. Retrieved 25 April 2015.
  5. 5. Chiconostle, Xoconoxtle is a type of cactus fruit or Tuna.
  6. 6. Chili pepper, chile pepper and chilli pepper are all common English spellings of the chili fruit. In some areas the word pepper is omitted. Sometimes chili is spelled chile, both are correct.
  7. 7. Mexican truffle or Cuitlacoche or Huitlacoche (both spellings are correct), is considered a delicacy. Mexican truffle is compared to truffles in food articles describing its texture and taste, a flavor described as mushroom-like, sweet, savory, woody, and earthy. Mexican truffle is a fancy name for corn smut, a plant disease caused by a fungus on corn. Cuitlacoche is one of my favorite foods.
  8. 8. In Mexico, sweet potato and yam are often called camote interchangeably.
  9. 9. Probably genus Piper Sanctum. The leaves to wrap and flavor, especially fish. Imparts a tarragon or anise like flavor. Sophie D. Coe and Michael D. Coe. The True History of Chocolate. (Thames and Hudson 2013). 93.
  10. 10. Tequezquite, tequexquite o tequixquitl is a mineralized salt used for seasoning.
